Dr. Oetker’s Organics - Coconut Pudding

I was feeling a little under the weather last night and craving comfort food. Dr. Oetker’s Organics Coconut Pudding was the perfect thing to cheer me up.
This isn’t instant pudding. It’s old fashioned cook on the stove top pudding (or in the microwave), and it’s worth the extra effort. The directions say serve warm or cold. I had it warm, with a few chocolate chips thrown in to get melty and some toasted coconut sprinkled on top (I really needed comforting).
It was creamy, even though I made it with skim milk, and there were bits of coconut mixed in.
It felt like a sinful indulgence, but it was actually a fairly sensible dessert. Figuring out the calories is a little confusing. A quarter of a package equals 100 calories, but that doesn’t figure in the milk (or the chocolate chips) so it’s a little more than that, depending on the type of milk you use (and how many chocolate chips equals a few in your book).
There are only a few ingredients: Organic Cane Sugar, Organic Cornstarch, Organic Coconut, Organic Pumpkin Powder, Salt. Dr. Oetker Organics Coconut Pudding is certified organic by QAI (Quality Assurance International) and comes in minimal, recyclable packaging.
Note: The box I purchased looks slightly different from the box pictured above, has a USDA Organic seal, and different ingredients than those listed on Dr. Oetker’s website. I’m guessing it has to do with the organic requirement differences between the U.S. and Canada (where it’s manufactured).
