Meat-Free Mondays - Vegetarian Chilaquiles

While there are a glut of bad Italian restaurants in our neighborhood, there was only one good Mexican Restaurant on our side of town. Last week, when we went to grab dinner, IT WAS CLOSED! FOR GOOD! I guess I’ll have to make my own chilaquiles.
I found a great recipe for Vegetarian Chilaquiles on Emily Skinner’s website. I don’t crush the chips when I make chilaquiles. I make layers out of the full chips.
Make it in a glass casserole dish for more efficient cooking.

I have to confess, I don’t know what exactly that’s a picture of. It’s a stock photo. But that’s pretty much what chilaquiles look like when I’ve made them.

Hmmm… the photo looks like lasagne, but either way, delicious.
I never heard of chilaquiles until last September when I was in Anaheim for the Disney 1/2 marathon with a friend of mine, and he introduced me to them in a Mexican restaurant. Oh my god! They were so good! Of course, the ones we had were full of meat and probably lard.
I’m going to try your recipe using fresh veg and dried beans instead of all the canned stuff. I wonder where I can find tortilla chips without plastic. Will have to do some research of figure out how to make my own.

Beth — if it’s any easier to get tortillas plastic free, you can cut them in triangles and bake them in the oven, but I don’t know if that really opens anything up in terms of possibilities.
I think it is lasagna.

Hey, just last night I had a veggie chimichanga at the Mexican place down the street and it was great. I am so on this recipe!
