I never heard of chilaquiles until last September when I was in Anaheim for the Disney 1/2 marathon with a friend of mine, and he introduced me to them in a Mexican restaurant.  Oh my god!  They were so good!  Of course, the ones we had were full of meat and probably lard.

I'm going to try your recipe using fresh veg and dried beans instead of all the canned stuff.  I wonder where I can find tortilla chips without plastic.  Will have to do some research of figure out how to make my own.
