Meat-Free Mondays - Apple Sauerkraut Quesadilla

This is one of the more risky recipes I’ve tried.  Apples and sauerkraut in a quesadilla?  Not ingredients that sound like they go together, but this is actually one of my new favorites.

This is another RealAge.com recipe.  I’m addicted.  I’m watching my cholesterol, and it’s really easy to search for low cholesterol, low calorie recipes in their database.  Check out the recipe here.

I’ve made this twice now.  The thinner you can cut the apples, the better.  And make sure the sauerkraut isn’t soggy when you go to assemble the quesadilla.  It’s easy, quick, and perfect with some Amy’s Black Bean Vegetable Soup on the side.
