We have chard in our CSA bag this week (tune in tomorrow for the week 3 update), so this week’s meat-free post puts it to good use.

Chard is one of those foods I never know what to do with.  It was probably going to end up being stir fried with a little garlic and served as a side dish, but this recipe for Chipotle Cheddar Chard makes it a main dish.   I’m going to use some gluten-free tortillas to make chard quesadillas with the mixture.
