Meat-Free Mondays - Eggplant Quinoa Rolls

I made these over the weekend, and they were wonderful!

These rolls are a little labor intensive, but it’s totally worth it.

I used the RealAge recipe for Eggplant Couscous Rolls, but substituted quinoa to make it a gluten-free meal. I cooked the quinoa according to package directions and added the thyme, salt, and oil while it was simmering.

At first I thought making tomato sauce from scratch was unnecessary. I also worried that the recipe didn’t call for enough spice, but I really enjoyed the delicate flavors in this dish.  Tomato sauce from a jar would have been overkill. That said, the recipe didn’t make a lot of sauce. Next time, I’ll probably throw in some extra tomatoes, because I like things saucy.

Also, next time, I’ll make this on a cooler day. It requires a lot of oven use, and totally heated up the kitchen when we were already in the 90’s here. I didn’t plan that one well.

Tip of the Day

Melt Down Old Candles

If you light candles in your house, you’ll know that there’s a point where there’s still wax left, but the wick is gone.  Recycle the wax and make new candles!
