Meat-Free Mondays - Mexican Polenta Scramble

This is one of my favorite RealAge recipes so far.

Polenta is a neat food.   It’s made from cornmeal and there are endless ways to prepare it.  It comes dry, like rice or pasta does, or already prepared in a tube.  It can be used instead of bread, as a side dish, or even to make a pancake like breakfast.   This recipe called for a tube of polenta, but if you wanted to get fancy with it, you could bake your own and use that instead.  I used Melissa’s Organic Polenta this time around.

I couldn’t find pepitas at the store, so we went without, but otherwise I followed the recipe exactly.  I will absolutely be making this again.  One serving has 315 calories and 13 grams of protein.

  3. Trader Joes sells polenta in its pasta isle. As I recall it’s pretty cheap.
