Meat-Free Mondays - Tomato Chick Pea Soup
It may be spring, but it’s not warm or sunny here today, and I’m in the mood for some comfort food.
With the exception of a leek, I have everything I need for Dianne’s Tomato Chick Pea Soup already. Hopefully, I can convince my husband to pop by the grocery store on his way home.
According to Nutrition Data, a serving of chick peas (also called garbanzo beans) packs a whopping 15 grams of protein and 50% of your recommended daily intake of fiber.
I’m planning to enjoy my hearty soup with a slice of gluten-free bread and a small salad.

Mm… that sounds good! I think it’s time for me to dig out one of my summer/spring recipes… chickpeas with tomatoes and spinach in Middle Eastern spices with mint yogurt. I’ll have to try this, too!
