Meat-Free *Tuesday* - Vegan Spinach Mushroom Quiche

I took yesterday off, so here’s a meat-free meal one day late.

I love making meals that leave me leftovers for lunch the next day. Quiche and a salad or bowl of soup makes the perfect light dinner and hearty lunch.

Quiche without dairy or eggs? Can it be done?

Check out Cookbooks 101’s Vegan Spinach Mushroom Quiche recipe. The recipe isn’t gluten free, but you can make a crust with a gluten-free mix instead of using oats and wheat flour.

White button mushrooms are fine, but you can always grow your own shiitake mushrooms too.
